🍴MIGRAINE-FRIENDLY RECIPE

🥣 Ground Turkey & Sweet Potato Bowl

📖 Ingredients

  • 1 lb fresh ground turkey (no additives or marinades)

  • 2 medium sweet potatoes, peeled and cubed

  • 2 cups fresh green beans or Swiss chard, trimmed

  • 1–2 tbsp olive oil

  • Salt and herbs like thyme or parsley (optional, avoid rosemary or spicy blends)

🦃 Instructions

  1. Roast the Sweet Potatoes 🍠 

    • Preheat oven to 400°F (200°C).

    • Toss cubed sweet potatoes in olive oil and a pinch of salt.

    • Roast on a baking sheet for 25–30 minutes, flipping halfway.

  2. Cook the Ground Turkey 👩‍🍳 

    • In a skillet, heat 1 tbsp olive oil over medium heat.

    • Add ground turkey and cook until fully browned (no pink remains), breaking it apart.

    • Season lightly with salt and allowed herbs.

  3. Steam the Green Beans or Chard 🥬 

    • In a steamer or pot with a steamer basket, cook green beans or chard for 5–7 minutes, until tender but still bright.

  4. Assemble the Bowl 🥣

    • Layer sweet potatoes, turkey, and veggies in a bowl.

    • Drizzle with a touch of olive oil if desired. Serve warm!
